I’ve been trying to nonchalantly throw together noodle salads for a little while now. I think I have a really great flavor combination and how can you really mess up a cold noodle salad – right?! Well – I have messed up a cold noodle salad. I’ve actually messed up more than I’ve succeeded when it comes to noodle salad. After a successful one tonight I now know the trick. Less Noodles. That’s it. That’s all you need to know. Put in more veggies, more dressing, more protein and less noodles. You then have the recipe for the perfect noodle salad. To be very specific I had 4 cups of veggies to 8 oz. of dry spaghetti – and it worked. This had been a burning issue for me so I’m just positive it has been for someone else too. And with all that I have to get ready for our upcoming first Market – totally appropriate to spend time writing and photographing noodle salad :)!
